About Bark 'n' Render
We smoke over Somerset oak for twelve hours, then let the meat rest until it pulls apart on its own. No sauce to hide behind — just salt, pepper, smoke and time, the way central Texas has done it for a century. Brisket goes on at midnight, ribs follow at dawn, and when the last tray is empty we pack up. That's why we sell out most Saturdays by two.
